A selection of red grapes coming from 3 different vineyards, exposed to different microclimates determining different ripening ages. The grapes, from late harvest, naturally dry on wattles.

Vineyards Exposure: the vineyards are excellently facing east, southeast

Grapes: Red Varieties

Number of vines per hectare: 3.600

Crop yield: 60-80 q/ha

Harvest: handpicked in November

Vinification: December, after grapes drying on wattles

Fermentation: stainless steel vats, with skins maceration

Elevage: French barrique for 6 months

Aging: bottle for at least 3 months
